Pesto Tortellini Salad



Pesto Tortellini Salad works great as lighter main dish or as a nice side dish. Use these quantities as a guide, especially for the pesto, as you may prefer either more or less than what is listed in the recipe.

Pesto Tortellini Salad (serves 4-6)

1 package frozen cheese tortellini

3 oz (1/2 package) fresh baby spinach (about 3 cups)

1 pint cherry or grape tomatoes

1/2 cup pesto

1/4 cup pine nuts

Prepare tortellini according to package directions. While pasta is cooking, slice tomatoes in half. Toast pine nuts in a dry skillet until golden brown. Drain pasta and place in large glass bowl. Mix in pesto. Stir in spinach leaves (While pasta is warm, spinach leaves will wilt, and this is what you want. You may have to add the spinach in batches). Add tomatoes and pine nuts. Enjoy!!
