Ground Beef Stroganoff



As soon as cool weather arrives, I think of comfort food. One of my ‘go-to’ recipes is Ground Beef Stroganoff. It’s a family favorite. Start to finish, it takes 30 minutes max! This recipe is based on one found in my very first cookbook, Cooking for One, Two- or More by Ireson and Lipscomb. But what’s different in mine is the lean ground beef and non-fat Greek yogurt instead of sour cream to decrease the fat content without sacrificing flavor. Just ask my picky eater whose birthday meal of choice is Ground Beef Stroganoff!

Ground Beef Stroganoff (serves 6)

1-1/2 pounds lean ground beef

1/2 pound white button mushrooms, sliced

1 medium onion, chopped

1/3 cup chili sauce

1 teaspoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon pepper

3 tablespoons whole wheat flour (white flour is fine, too!)

1 cup non-fat plain Greek yogurt

1/2 pound egg noodles, prepared according to package directions

Brown ground beef in large skillet. Add mushrooms and onion. Cook until onion is soft and translucent. Drain. Stir in chili sauce, Worcestershire, salt, and pepper. Mix in flour. Just before serving, stir in yogurt. Serve over cooked egg noodles. Enjoy!
