MyPlate2Yours Granola

The original recipe was given to me in 2011 by my dear friend & fellow dietitian, Jane. Since then, I tweaked it slightly and made it a hundred times! Besides making it regularly for my own family, I make it to fill pretty containers as thank you gifts for friends, as gifts around the holidays for teachers and colleagues or as hostess gifts. This granola even traveled to Argentina to fuel the soccer team my oldest daughter played for and to so many other people and places. Thank you, Jane!!!!!

This triple grain granola has oats, barley and wheat. It’s delicious as a snack or a satisfying breakfast when topped with yogurt and berries. The smells in your kitchen while the granola is cooking will easily attract your entire family from all corners of your house!

MyPlate2Yours Granola (makes 11 cups)

©myplate2yours

6 cups oatmeal (do not use quick or steel-cut oats)

1 cup unsweetened shredded coconut

1 cup Grape-Nuts cereal

1 cup slivered almonds

1 cup sunflower or pumpkin seeds

1/3 cup honey

1/2 cup canola oil

1/3 cup apple juice

1-1/2 teaspoon vanilla extract

1 teaspoon salt

1 cup dried cranberries or cherries

Combine the first 5 ingredients. Combine other ingredients (except dried fruit). Pour over cereal mixture. Mix to coat well. Spread onto 2 greased baking sheets and bake at 325°F for 30 minutes. Stir every 10-15 minutes. Remove from oven and add dried fruit. Allow to cool completely before storing in an airtight container. Enjoy!
