30-minute White Turkey Chili (serves 4-6)
1 pound ground turkey
2 cans cannellini beans
1 jalapeño pepper, diced (or 1 can diced green chilis)
1 small onion, diced
1 green bell pepper, diced
2 cups chicken stock
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon white pepper
1/4 teaspoon ground cayenne pepper (optional)
In a medium saucepan, cook ground turkey, onion, bell pepper and jalapeño until turkey is browned and vegetables begin to soften, about 10 minutes. Stir in beans, broth and seasonings (and green chilis, if using). Bring contents to a simmer and cook for 20 minutes. Serve with shredded Monterey Jack cheese. Enjoy!
