Oven Baked Salmon with Cucumber Dill Sauce



We all crave meals that are fresh, fast, tasty, and healthy, too. Nothing is faster than baking fresh salmon in a hot oven for 10-12 minutes. If the 3-ingredient Cucumber Dill sauce is assembled while the oven is preheating, then there will be just enough time when the salmon is baking to prep a vegetable side. Try it tonight! You'll be glad you did!

Oven Baked Salmon with Cucumber Dill Sauce (serves 4)

Olive oil

1.5 pounds salmon filet

Salt and pepper

1 lemon, cut in half (and one half into 4 or 5 wedges)

1/3 cup English cucumber, peeled, small dice

8 ounces plain Greek yogurt (non-fat, 2% or whole)

2 tablespoons fresh dill, minced

Preheat oven to 400 degrees. Prepare a baking dish with parchment paper. Set aside.

Make Cucumber Dill Sauce: in a small bowl, combine yogurt with cucumber, dill and 1/4 teaspoon salt. Set aside.

Pat moisture from salmon with paper towels. Place salmon on the prepared baking sheet and brush lightly with olive oil. Season with salt and pepper. Squeeze the juice of one half lemon over top. Place pan with salmon in oven and bake for 10-12 minutes until cooked through.

Serve with a dollop of ‘Cucumber Dill Sauce’ and a wedge of lemon. Enjoy!
