When you need a quick appetizer that also serves as the start of a light meal, Asparagus and Prosciutto Spirals are the answer. They pair well with cheese and crackers or bruschetta to provide meal quality. And with only three ingredients, this recipe is truly a winner!
Asparagus and Prosciutto Spirals (Makes 30 pieces)
3 dozen asparagus spears, trimmed and blanched if thicker than 1/2 inch diameter
1/4 pound prosciutto (at least 6 thin slices)
2 tablespoons Dijon mustard
Preheat oven to 400 degrees. Prepare a baking sheet with cooking spray or parchment paper. Brush one side of prosciutto lightly with Dijon mustard. Slice prosciutto lengthwise into 1/2 inch wide strips. Roll the prosciutto strips around a spear of asparagus, leaving the top and bottom ends of the spear uncovered. Place spears onto prepared baking sheet. Bake for 10 minutes until asparagus is tender crisp. Place cooked spears on a platter to serve. Enjoy!
