The tangy feta, crisp lettuce and fresh veggies with a lemony dressing creates a classic salad that never disappoints! First, these ingredients are available year-round, bringing deliciousness to your table any season of the year. Also, you will NOT find any added sugar in this recipe unlike most salad dressings which contain some added sugar. That is great news for any of us trying to limit added sugar to less than 50 grams daily (12 teaspoons). Finally, you can customize the ingredients to adjust for personal tastes. Not a fan of radishes? Go ahead and omit them. Prefer red bell pepper to green? Go for it! This flexible salad provides nothing but fresh goodness to enjoy!
Classic Greek Salad (serves 4 to 6)
1 head romaine lettuce-rinsed, dried, chopped
1 red onion, small, thinly sliced
½ cup pitted black olives (kalamata are traditional)
3 radishes, sliced
1 green bell pepper, sliced thin
1 large tomatoes, chopped (or 1 cup grape tomato, halved)
1 medium cucumber, peeled and sliced
3/4 cup feta cheese, cubed
1/3 cup olive oil
1/2 teaspoon dried oregano
1 lemon, juiced (3 tablespoons)
1 clove garlic (pressed or finely minced)
Sea salt and ground black pepper to taste
1. In a large salad bowl, combine the romaine, onion, olives, radishes, bell peppers, tomatoes, cucumber and cheese.
2. Whisk together the olive oil, oregano, lemon juice, and garlic. Add salt and and black pepper, as needed. Pour over the salad, toss and serve. Enjoy!
