No-Bake Protein Poppers (Makes 30 pieces)
½ cup sunflower seed butter
½ cup honey
1 teaspoon vanilla extract
¼ cup unsweetened coconut flakes
¼ cup ground flaxseed meal
1 ½ cups quick cooking oats
½ cup popped rice cereal (e.g., Rice Krispies)
¼ cup mini chocolate chips (optional)
In a large bowl, cream together sun butter and honey. Fold in vanilla extract. Stir in ground flaxseed, coconut flakes, oats, rice cereal, and mini chocolate chips. Stir until well combined. The mixture should be thick and sticky. Freeze for about 10 minutes or until chilled. Use a mini ice cream scooper or spoons to scoop out mixture. Roll into 1-inch balls. Store in an airtight container in the fridge or the counter. Enjoy!
