This recipe was birthed last night at 6pm as I looked into my fridge for something to make. A lonely half bag of baby potatoes and some fresh Brussels sprouts were all I had. I truly didn't expect such a delicious outcome.
Nothing is better than an easy one-pan meal!
To start, I pulled out a pound of pork chops from my freezer and gently thawed them in the microwave. After placing everything on this pan and prepping the contents with olive oil, salt and pepper, I then brushed the pork with some BBQ sauce. The whole thing cooked for 30 minutes, but I flipped the pork and re-applied some sauce after the first 15 minutes. I hope you enjoy this meal as much as we did!
Sheet Pan BBQ Pork and Brussels (serves 4)
1 pound pork chops, not more than 1/2-inch thick
1 pound Brussels sprouts, washed and trimmed
1 pound baby potatoes
Olive oil, about 1/4 cup
Salt and pepper
Barbeque sauce, about 1/4 cup
Preheat oven to 425 degrees. Prepare a baking pan with parchment paper. Set aside.
Prepare veggies but cutting in half any that are larger than a ping-pong ball.
Place pork onto baking pan. Scatter Brussels and potatoes around the pork. Drizzle with olive oil and season generously with pepper and salt. Brush BBQ sauce on pork.
Place in oven for 15 minutes. Flip pork and brush with BBQ sauce.
Return pan to oven for 15 minutes or until pork is 145 degrees. Enjoy!
